Made my Mexican Style Cartel Cornbread.
Roasted Hatch Chili's, carmelized onions, browned/drained breakfast sausage, diced fried and drained bacon, sweet corn, sharp cheddar, Martha White Mexican Cornbread Mix. I add a couple more eggs than called for on the packs, and a little less milk. Pre-heat the cast iron cake pan with bacon grease to smoking hot, pour it in and bake. Cook it at 375 for about 40-45 mins. Comes out pretty damn good. First pic is right after pouring it into the pan, you can see the sizzle on the edges. Gotta have that to set that crust.

Made some Cowboy Cornbread awhile back, twice actually. Very similar and damn good.
