Fixins for a Redneck Burrito.



They said; Don't Do it!"
Fortunately the one on top prevented a catastrophe by containing the shrapnel when I forgot the plates heating on the burner.
I've done it for years. I forgot once.

Are you actually cooking it on the plate or just heating up the shell?

I make a similar breakfast burrito.

When things are tight, eggs and some of Momma's home made salsa.

We splurge when we had a little bit of sausage to the above.

Usually just nuke the tortillas in the microwave.

For quesadilla sprinkle a little bit vegetable oil onto a warm skillet, toss a the tortilla on there for a minute, add some cheese, chicken, whatever you like, throw another tortilla on top, flip, cook for 60 seconds. Result best daddy in the world.

I miss eggs in a breakfast burrito. In the past 2 years I have developed allergies to eggs and dairy. Starting to limit some comfort foods. A little cheese is okay, but a lot really gets me sick.

You're not alone.  My dad got diagnosed with Diabetes at 70.  He doesn't have to do insulin but he eats like a rabbit.  He says it sucks.  No hamburgers, tacos, pizza, steaks.

He's disciplined making the corrective measures on the diet forgoing to medical correction methods, drugs and insulin.  Thus rabbit food.

I had part of my large intestine taken out about 7 years ago and I'm supposed to eat 6 smalls meals a day. Never happened. Who the heck can take the time to eat so many meals?
This past summer my wife tells me I should try duck eggs since our ducks were putting out about 6 eggs per day. I thought I was sick from chicken eggs, the ducks eggs made me so sick I actually thought I was going to have to call an ambulance. Man, do I miss omelettes!
